Flourless French Chocolate Gateau (gluten free)

Be sure all the ingredients are gluten free. I have made it many times and am always asked for the recipe.

Flourless French Chocolate Gateau- 10 ounces Semi Sweet Chocolate Chips
- 2 ounces Bittersweet Chocolate chips or bar, 62% or higher
- 1 1/2 cups Granulated sugar
- 2 teaspoons Insant Espresso powder
- 3/4 cup Boiling water
- 3 cubes unsalted butter room temp, the softer the better
- 6 large eggs, room temp
- 1 Tbsp Vanilla, mint, orange, Brandy or Cognac
Directions
- Preheat oven to 350° F.
- Cover the bottom of a springform pan with foil. Place the bottom in FLAT side up, and butter the foil and sides of pan.
- In food processor bowl, process the chocolates and sugar until finely ground.
- Dissolve the espresso powder in boiling water and add to chocolate, processing till completely melted. Scrape down the sides. Add the butter and process till butter is completely incorporated. Add the 6 eggs and vanilla, process 8 seconds till smooth.
- Pour into prepared pan, put the pan on a cookie sheet and bake 55-65 minutes. The edges will be puffy, the center should seem just set, but a little jiggly.
- Cool on a wire rack least an hour, then cover refrigerate till cold, overnight if possible. When ready to serve, be careful removing cover, as condensation tends to form. Run a knife around the edges and remove ring. Slide off pan (still on foil,) and remove foil so you don't serve any of it!
- Place on serving plate. Serve in small wedges with whipped cream.
