Easy Rice Pudding (gluten free, egg free, dairy free, vegetarian)

Servings: 6 cups
Ingredients
- 5 cups Rice Milk
- 2/3 cup Long grain or basmati rice
- 1 tablespoon Splenda (or 2 T sugar)
- 1 tablespoon plus 1 teaspoon cinnamon
Directions
- Bring Rice, Rice milk and cinnamon to a boil then cover and simmer for 55 minutes until thick.
- Stir in the sugar, then transfer to a bowl
- Sprinkle with more cinnamon, cover and refrigerate.
