Doughnuts (gluten free)

Ingredients
  • 1 1/2 cups Pamela's Baking Mix
  • 1/4 cup corn starch
  • 2 teaspoons xantham gum
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup sugar
  • 3 eggs
  • 1/2 cup milk
Directions
  1. Sift all dry ingredients together
  2. Add eggs and milk and refrigerate for 20 minutes
  3. Drop spoonfulls into hot oil, fry 2-3 minutes on each side (doughnuts will flip themselves when the first side is done).
  4. Cool slightly & roll in powdered sugar.

    Hey, guys
    In my experience making doughnuts, normal canola oil or sometimes olive oil seems to be the best. Peanut oil is good for meats, but the smoking point is a little too high for something as delicate as a pastry bread.

    As for how deep, try about four and a half inches in hight. You can always add more if you need to, and it's easy put the leftover oil in a container to use again in some other cooking :)

    If you don't have a deep fryer and have to use a pan with heated cooking oil, how deep would you suggest the oil be for these?
