Blueberry Lemon Pecan Bread Pudding (gluten free)

My goal is always to make gluten free food for everyone in the house that everyone will love. Here's my latest success! Can you impress a bread pudding connoisseur with gluten free bread pudding? DEFINITELY!

Servings: 8 servings
Ingredients
  • 1/2 loaf Gluten Free Sandwich Bread I use brown rice, but white rice or tapioca bread will work nicely
  • 1/2 stick butter
  • 1/2 cup sugar
  • 1/4 cup Frozen lemonade concentrate Yellow
  • 3 eggs + 1 egg white
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup blueberries
  • 1/2 cup pecan halves
Directions
  1. Preheat oven to 325°
  2. Butter a 2 qt. baking dish
  3. Cut bread into cubes and put in baking dish evenly
  4. In a small bowl, whisk together eggs and milk. Set aside.
  5. In a small pot, combine sugar and butter. Stir constantly over low heat until butter is melted. Add egg mixture, and lemonade, stirring constantly until thickened.
  6. Pour mixture over bread. Sprinkle with blueberries and pecans.
  7. Bake for 30 minutes covered and 20 minutes uncovered
Serve warm with ice cream, whipped cream, or powdered sugar.

    You mention combining sugar and butter, but sugar is not listed in the ingredients. What gives?

    Sorry- 1/2 cup sugar- it's in there now.
