Apple Cake

I adapted this from a recipe I found in the OC Register
Details

Servings: 8 servings
Ingredients
  • 1/4 cup garbanzo bean flour
  • 1/4 cup buckwheat flour
  • 1/4 cup brown sugar
  • 2 Tablespoons molasses
  • 1 Tablespoon Baking Powder
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 2 eggs or 1 banana
  • 2 tablespoons oil
  • 1/3 cup milk (I used coconut)
  • 4 baking apples (sliced or diced)
  • 1/2 Tablespoon xanthum gum
  • cinnamon, nutmeg and cloves to taste
Directions
  1. Heat oven to 400 F
  2. Mix together everything but the apples.
  3. Put the apples in and coat with the batter.
  4. Pour into a cake pan.
  5. Bake 25 minutes.
  6. If desired take out and top with a sugar oil mixture to make a crispy top. put back in for 10-15 minutes until a tooth pick comes out clean
*if you bake in a deeper dish like I accidentally did the first time after the recommended baking time turn the oven down to 300 and test occasionally with toothpick
