Almond Coookies (gluten free, egg free, sugar free, low carb)

(These work well with sugar, but the texture is better with Splenda. With Splenda this is a low carb recipe.)

Servings: 24 pieces
Ingredients
- 2 cups Almond flour
- 1/2 cup Splenda (or white sugar)
- 1 stick (1/2 cup) softened butter
- 1 teaspoon Vanilla extract
- 1 teaspoon Almond extract
Directions
- Preheat oven to 325 °
- Combine all ingredients.
- Form dough into walnut sized balls and place onto a non stick cookie sheet.
- Bake for 5 minutes and remove from oven.
- Using a fork lightly press down on each and return the oven.
- Bake for another 10 minutes and cool
Hi i'm new to this websight for glutenfree I didn't even think to look up on fb. I've been on a glutenfree diet for years and still don't like to cook with it very well I hope to find some good things here the cookies look good I will try them also thanks Angie
Try the "Living Without" magazine, use the flour blends in the back to convert your favorite recipes to gluten free, may need to adjust a little but I have not had to.
Mmmm - these look delicious! I'm going to try making them with sucanat and will let you know how they turn out. Thanks for the great recipe!
