Pumpkin Waffles Recipe Image

Pumpkin Waffles

Serve with- 1 ½ cups of maple syrup (sugar free) heated up

Servings: 4 servings
Ingredients
  • 1 C GF flour (I use Bob's Red Mill or Pamela's)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp canola oil
  • ¼ tsp salt
  • ¾ tsp cinnamon
  • ½ tsp ginger
  • 1/8 tsp nutmeg
  • 1 T brown sugar
  • ¼ C melted butter (use DF margarine or dairy free alternative if you choose)
  • ¾ C milk (use rice, almond or coconut milk for dairy free)
  • 1 lg egg
  • ¼ C canned pure pumpkin
  • 2 T Splenda or no cal sweetener
Directions
  1. Preheat waffle iron, spray with cooking spray.
  2. In large bowl combine flour, baking powder, soda, salt and spices set aside.
  3. In another bowl combine oil, sugars, butter , pumpkin, milk and eggs. Add to dry ingredients stirring just until moistened.
  4. Pour batter into hot waffle iron and cook according to manufacturers instructions.

    Sounds yummy....as a Nutritionist I would just suggest skipping the artificial sweetener and canola oil :)

    Recipe doesn't say whether to add pumpkin in step 2 or 3. I added it in 3.

    I also used Namaste's Perfect Flour Blend for this.

    Yummy!

    I love all the pumpkin recipes right now!
    I often add a couple Tbsp coconut flour & one of montina to a C of flour (substitute for = amount) & I'd use coconut oil! This does sound yummy!
