GF/DF Pancakes

This is our adaptation of the standard Joy of Cooking pancakes recipe.

Servings: 4 servings
Ingredients
  • 1 1/2 Cups Bob's Red Mill Gluten Free flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon xanhan gum
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • dash nutmeg (to taste)
  • 3 eggs
  • 1 cup rice milk
  • 1 teaspoon vanilla
  • 1 tablespoon vegetable oil
Directions
  1. Separate the eggs, whip the egg whites to medium peaks.
  2. In a large mixing bowl combine the rest of the ingredients, we put the liquids in the bowl first as it makes getting all the flour mixed easier.
  3. We use a hand mixer, do the egg whites, and then beat the batter until smooth.
  4. The batter should be thin but not runny. Fold in the egg whites.
  5. Cook as regular pancakes on a griddle over medium-high heat.
