GF/DF Pancakes

This is our adaptation of the standard Joy of Cooking pancakes recipe.

Ingredients
- 1 1/2 Cups Bob's Red Mill Gluten Free flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon xanhan gum
- 1 1/2 tablespoons sugar
- 1/2 teaspoon salt
- dash nutmeg (to taste)
- 3 eggs
- 1 cup rice milk
- 1 teaspoon vanilla
- 1 tablespoon vegetable oil
Directions
- Separate the eggs, whip the egg whites to medium peaks.
- In a large mixing bowl combine the rest of the ingredients, we put the liquids in the bowl first as it makes getting all the flour mixed easier.
- We use a hand mixer, do the egg whites, and then beat the batter until smooth.
- The batter should be thin but not runny. Fold in the egg whites.
- Cook as regular pancakes on a griddle over medium-high heat.
