French Toast Casserole (Gluten Free)

Talk about comfort food! Try this for breakfast with company, brunch potluck, or family holiday - or just a treat for your family.

Servings: 12 servings
Ingredients
  • 2 loaves gluten free bread
  • 1/4 cup brown sugar
  • 4 eggs
  • 1 1/2 cups milk
  • 3 ounces cream cheese (Once small 3 ounce package or about 1/3 of a rectangular package)
  • 1 tablespoon vanilla
  • 1 tablespoon cinnamon
  • top with whatever you like-raisins, nuts, peaches, berries, apple chunks
  • sprinkle with sugar and cinnamon
Directions
  1. Spray 9 x 13 pan with nonstick spray
  2. Cut bread into cubes and put in bottom of pan (i like to cut off the crusts, but include them if you like)
  3. Mix remaining ingredients and pour over top. Top with raisins, nuts or other fruit. Then sprinkle with sugar and additional cinnamon.
  4. Bake at 350 for about 45 min. or until no longer gooey in center.
  5. Serve with maple syrup.

    Hey there. Iam a bit new to all this being super careful watching what you eat thing. Argh. Anyway, is there a non dairy cream cheese alternative? I have used some vegan cheeses but have not seen a cream one.

    For this recipe, I have used Glutino Cinnamon Raisin Bread and Whole Foods Sandwich Bread. Both are really good. I would imagine anything you have would work since you are pouring all this other stuff on top of it. Hope you like it as much as we do!

    Yikes--that would be twelve dollars worth of bread where I shop! But it sounds like it would be worth it for the results. Thanks so much for giving us some nice normal recipes to try! This looks like a winner.
