Family Friendly Waffles

By: Erin Edwards

You don't have to be gluten free to enjoy these! These waffles earned the whole family's seal of approval. You may also use this recipe to make pancakes and I may try to use it to make muffins.
Details
Servings: 4 servings
Ingredients
  • 1 1/4 cups brown rice flour
  • 1/2 cup sweet sorghum flour
  • 1/4 cup potato starch
  • 1/4 cup sugar
  • 1 tablespoon milled flax seed
  • 1 teaspoon GF baking powder
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt salt
  • 2 eggs
  • 1/2 cup vanilla coconut milk kefir
  • enough water to get it to the right consistency (I used about 1/4 cup... it will be thicker than glutinous waffle batter)
Directions
Place on hot, greased waffle pan (follow pan instructions; they seemed to cook faster than wheat waffles)
