Buckwheat Pancakes (gluten free)

These are better than wheat flour pancakes. Wonderful texture. Use a non-stick pan

Ingredients- 1/2 cup Basic Baking Mix (see below)
- 1/2 cup buckwheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 3/4 cup milk or soy milk
- 1 tablespoon good oil
Basic Baking Mix- 3 cups Rice Flour (Brown or White)
- 1 cup Potato Flour
- 1/2 cup Tapioca Starch
- 3 cups Rice Flour (Brown or White)
- 1 cup Potato Flour
- 1/2 cup Tapioca Starch
Directions
- Combine dry ingredients.
- Beat egg and other wet ingredients. Beat all together well. (Unlike gluten containing flours, you can beat it as much as you like.)
- Makes 6 large pancakes
- Basic Baking Mix: 3 cups rice flour (brown or white) 1 cup potato flour 1/2 cup tapioca starch Mix together well and store in a canister.
- All these ingredients should be readily available at any store stocking organic ingredients. Tapioca starch is cheap in Asian stores.
