Brunch Pizza (gluten free)

Elegant enough for a fancy brunch, but simple enough for a family weekend meal!
Details
Servings: 10 servings
Crust Ingredients- 1 package Frozen Hash Browns Check to make sure your brand is GF
- 1 Egg
- dash Salt and Pepper
Egg Topping- 7 Eggs
- 1/2 cup Milk
- 1 1/2 cups Shredded Cheddar Cheese
Addtional Optional Toppings- Chopped Green Onions
- Chopped Green Peppers
- Sliced Mushrooms
- Bacon cooked and crumbled
- Chopped Ham
- Cooked Spinach
- Diced tomato
- 7 Eggs
- 1/2 cup Milk
- 1 1/2 cups Shredded Cheddar Cheese

Directions
- Preheat oven to 400°
- Place parchment paper on baking stone or pizza pan
- Combine crust ingredients and spread onto a 14" circle. Pat down with back of spoon. Dash of salt & pepper
- Bake for 20 minutes
- Whisk eggs and milk together. Cook in microwave on high for 3 minutes. Stir. Cook additional 3 minutes. Stir. Spread mixture evenly over baked potato crust. Top with additional ingredients and cheese. Bake for another 10 minutes. Cut with pizza cutter.
I made this for supper last night. I know it's a BRUNCH Pizza but it was delicious for supper as well. Some nights we are just in the mood for eggs and this was a marvelous presentation. Thank you Nancy, this will become part of our repertoire.

Great recipe! Make sure that the hash browns you use are gluten free! A lot of them list wheat flour in the ingredients!
