Pumpkin Bread (Gluten Free and dairy free)

Ingredients
- 3 1/2 Flour (Bob's Red Mill All Purpose GF Flour Blend)
- 3 cups sugar
- 1 cup vegetable oil
- 1/2 teaspoon nutmeg
- 4 eggs
- 2 cups canned pumpkin
- 2/3 cup water
- 1/2 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons xanthan gum
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon allspice
Directions
- Blend wet ingredients in a large bowl. Mix well.
- Combine dry ingredients in a separate bowl. Beat wet and dry ingredients together.
- Place batter in 2 or 3 greased/floured loaf pans.
- Bake at 325 degrees for 1 hour or until toothpick comes out clean. Or use a muffin pan and bake until toothpick comes out clean (20-30 minutes depending on the size of the muffins – mini vs regular)

3 cups of sugar is that correct ?
Dairy comes from milk products. Eggs aren't dairy. You can usually use an egg substitute such as EnerG egg replacer if you can't have eggs, though.

I didn't know cows laid eggs. Goats either.
