Servings: 5 cups
Ingredients
- 2 eggs
- 1 teaspoon salt
- 1 cup of milk
- 1 cup of flour - Or, use preprepared pancake mix
- 1 teaspoon of xanthum
Directions
- Beat 2 eggs and 1 teaspoon of salt until frothy.
- Add 1 cup of milk and beat until frothy.
- I add 1 cup of The Really Great Food Company's pancake/waffle mix and beat well.
- Preheat over to 400 and fill large muffin cups 3/4 full. Bake for 10 minutes and then lower heat to 300 for last 10 minutes.
