Popovers (gluten free)

Servings: 5 cups
Ingredients
  • 2 eggs
  • 1 teaspoon salt
  • 1 cup of milk
  • 1 cup of flour - Or, use preprepared pancake mix
  • 1 teaspoon of xanthum
Directions
  1. Beat 2 eggs and 1 teaspoon of salt until frothy.
  2. Add 1 cup of milk and beat until frothy.
  3. I add 1 cup of The Really Great Food Company's pancake/waffle mix and beat well.
  4. Preheat over to 400 and fill large muffin cups 3/4 full. Bake for 10 minutes and then lower heat to 300 for last 10 minutes.
Can add choc. chips if want sweet. We spread butter/cream cheese and jelly on ours!
