Fruit & Nut Muffins (gluten free, can be dairy free)

Ingredients
- 1/2 cup oil (or melted butter)
- 1/2 cup sugar or brown sugar
- 1 cup pureed winter squash or 2/3 yogurt
- 1 egg
- 1 cup baking mix (see recipe on this web site)
- 1 teaspoon baking powder
- 2 heaping tablespoons oat bran or rice polish
- 1/4 cup currants
- 1/4 cup white raisins
- 1/4 cup chopped pecans or walnuts
- 1 teaspoon orange or lemon zest or 1/4 . nutmeg
Directions
- Beat the oil, sugar, yogurt and egg together. (A blender works well.
- Combine dry ingredients with the wet ones until well mixed. Add fruits, nuts and zest.
- Mix and spoon into buttered muffin tins, nearly filling them.
- Bake at 325 for about 45 minutes.
