Fruit & Nut Muffins (gluten free, can be dairy free)

Servings: 8 pieces
Ingredients
  • 1/2 cup oil (or melted butter)
  • 1/2 cup sugar or brown sugar
  • 1 cup pureed winter squash or 2/3 yogurt
  • 1 egg
  • 1 cup baking mix (see recipe on this web site)
  • 1 teaspoon baking powder
  • 2 heaping tablespoons oat bran or rice polish
  • 1/4 cup currants
  • 1/4 cup white raisins
  • 1/4 cup chopped pecans or walnuts
  • 1 teaspoon orange or lemon zest or 1/4 . nutmeg
Directions
  1. Beat the oil, sugar, yogurt and egg together. (A blender works well.
  2. Combine dry ingredients with the wet ones until well mixed. Add fruits, nuts and zest.
  3. Mix and spoon into buttered muffin tins, nearly filling them.
  4. Bake at 325 for about 45 minutes.
