Millet Bread

This is a great substitute for Cornbread. Our whole family loves it!

Servings: 9 servings
Ingredients
  • 2 Cups Millet Flour (optional: can sub 2 T soy flour for millet flour for flavor and nutrition)
  • 3 T. Sugar
  • 1 T. Baking Powder
  • 1/2 t. Salt
  • 1/2 t. Xanham Gum
  • 2 Eggs
  • 1 c. Almond Milk
  • 1/4 c. Olive Oil
Directions
  1. Preheat oven to 425.
  2. In a medium mixing bowl combine flours, sugar, baking powder, salt and xanthan gum.
  3. In a small bowl combine eggs, almond milk, and olive oil.
  4. Add liquid mixture to dry mixture, stirring just until batter is smooth.
  5. Pour into greased (bottom only) 8 or 9-inch pan.
  6. Bake for 20 minutes or until golden brown.
