Millet Bread

This is a great substitute for Cornbread. Our whole family loves it!

Ingredients
- 2 Cups Millet Flour (optional: can sub 2 T soy flour for millet flour for flavor and nutrition)
- 3 T. Sugar
- 1 T. Baking Powder
- 1/2 t. Salt
- 1/2 t. Xanham Gum
- 2 Eggs
- 1 c. Almond Milk
- 1/4 c. Olive Oil
Directions
- Preheat oven to 425.
- In a medium mixing bowl combine flours, sugar, baking powder, salt and xanthan gum.
- In a small bowl combine eggs, almond milk, and olive oil.
- Add liquid mixture to dry mixture, stirring just until batter is smooth.
- Pour into greased (bottom only) 8 or 9-inch pan.
- Bake for 20 minutes or until golden brown.
