GF Oatmeal Breadmachine Bread (gluten free, sugar free)

I have also used this recipe to make dinner rolls. Increase the club soda to 1 3/4 cups. Just use your heavy duty mixer to mix up...put the liquid mixture in the bowl first then add the flour mixture. Makes 18 large muffins. Put dough in muffin tins and smooth the tops with the back of a wet spoon. Raise for 20 minutes and then bake for 16-17 minutes @ 375 degrees.

Ingredients
- 1 tablespoon xanthan gum
- 1 cup brown rice flour
- 1/2 cup sweet rice flour
- 1/4 cup flaxseed meal
- 1/2 cup potato starch flour
- 1/2 cup tapioca flour
- 1/4 cup millet or sorghum flour
- 1/4 cup buckwheat flour or rice bran
- 1/4 cup GF oatmeal flour (or finely grind GF oats)
- 1 teaspoon unflavored gelatin powder
- 1 teaspoon salt
- 10 ounces club soda, warmed
- 1/4 cup honey or agave nectar
- 1 tablespoon rapid rise yeast
- 3 X-Large eggs or 3/4 cup
- 1 teaspoon cider vinegar
- 1/3 cup melted butter, cooled
Directions
- Have all ingredients at room temp except the club soda--heat until 115 to 120 degrees. About 50 seconds in a 1000 watt microwave.
- In a medium bowl, stir together all the flours, xanthan gum, unflavored gelatin and salt. In a smaller bowl, stir together the club soda, honey or agave nectar and yeast.
- Let foam for 5 minutes and then add the eggs, vinegar and butter.
- Place the liquid ingredients in the bread machine pan.
- Add the dry ingredients and put the pan in the bread machine. Select gluten free cycle.
