Southern Biscuits (gluten free, can be dairy free)

I live in the NW but my family is from the south..and I grew up on Southern Biscuits... This recipe has ended my quest for a good down home tasting gf biscuit.

Ingredients
- 3 cups gf flour blend (see below)...
- 1 1/2 teaspoons xanthan gum
- 4 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon sugar
- 5 tablespoons veg oil or olive (I use olive)
- 4 tablespoons butter * cold but slightly softened works best
- 1 1/2 cups of milk or butter milk
The GF flour blend I make and keep in a large container in my pantry to use for almost all of my recipes is:- 1 1/3 cups brown rice flour
- 1 1/3 cups tapioca flour/starch
- 1 1/3 cups corn starch
- 1 tablespoon potato flour (not starch)
Directions
- mix dry ingredients together
- mix in the oil/cut in the butter-it will get coarse & crumbly
- mix in the milk..just enough to moisten every thing.
- I then used a 1/4 sized measuring cup and molded the dough in it and then placed on a cookie sheet (greased).
- Space about 2 inches apart in a preheated oven at 425 degrees for about 10-12 min.
- They taste best right out of the oven.
- NOTE- FOR DAIRY FREE REPLACE BUTTER W/YOUR FAVORITE DAIRY FREE MARGARINE OR DAIRY FREE SPREAD. REPLACE THE MILK W/ YOUR CHOICE OF SOY,RICE OR NUT MILK.
