GF banana peanut butter muffins/bread

Servings: 6 servings
Ingredients
  • 1/3 cup Canola oil
  • 2/3 cup brown sugar
  • 1 3/4 cups all purpose GF flour
  • 1 tsp vanilla
  • 2 eggs
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp. Xanthan gum
  • 1/2 tsp. salt
  • 3-4 mashed ripe bananas
  • 1/2 cup peanut butter chip (morsels)
  • 1/2 cup GF peanut butter
Directions
  1. mix all wet , then add dry
  2. fill muffin tins or loaf pan
  3. 350° : 35-40 minutes for large muffins 6 count, less for smaller muffins 12 count, 1 hour for loaf pan

    These muffins are terrific! We just made them and gobbled them up for breakfast. We did not use peanut butter chips (b/c we didn't have any), but even if we have them when we make them again, I don't think we will add them. They were just so good. Thanks for sharing!

    These do look great but my kids have to stay off of peanut butter as well. I might try them almond butter. Thanks for the recipe!
