Easy Gluten Free Bread (gluten free, dairy free)

Ingredients
- 2 cups rice flour
- 1 cup tapioca flour (or cornstarch)
- 1 tablespoon xanthan gum
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups water
- 1 package dry yeast
- 2 eggs
- 1/4 cup canola or other veg oil or melted butter
- 1 teaspoon cider vinegar
Directions
- using an electric mixer, combine all ingredients, the dough will resemble a thick batter.
- scoop into an oiled 9x5 in loaf pan & smooth the top. spray or brush the top with a light coating of veg oil. loosley cover with plastic wrap & set aside to rise until the dough is even with the top of the pan (ours didn't rise all the way but was still good!)
- about 1 1/2 hrs. after it has risen, preheat the oven to 375°. remove the plastic wrap and bake till golden brown, 45-50 mins.
- remove from the oven onto rack to cool for 30 mins b4 slicing. once sliced, this bread freezes well - just toast b4 eating
