CS's Amazing Flax Crackers

I have toyed with several cracker recipes. This one is by far the tastiest, and most satisfying. Extremely easy to make. Just one warning: you will start to crave these! If the Cajun seasoning is too strong for your taste, go with something a little milder. I have also used the same amount of Allesio's Grilling Spices.

Ingredients
- 1 cup flax seeds
- 1/4 cup sesame seeds
- 1/2 cup sunflower seeds
- 2 Tablespoons Poppy Seeds
- 3 Tablespoons Emeril's BAM cajun seasoning
- 1/2 cup parmesan cheese
- 1 cup water
Directions
- Put all the dry ingredients in a bowl and mix with large spoon. Add the water and let set about 10 minutes.
- Line cookie sheet with parchment paper and spoon the mixture onto the parchment. Put another piece of parchment on top and roll with a rolling pin until about 1/8" thin. Remove top parchment paper.
- Place in pre-heated 275 degree oven. after 45 minutes remove from oven and slice or break into cracker size pieces. turn oven up to 350 and bake about 10 more minutes.
- Crackers will continue to crisp as they cool. If they get a little soft after storing in zip-top bag, just place back in oven at 350 for 5-10 minutes.
