CS's Amazing Flax Crackers

I have toyed with several cracker recipes. This one is by far the tastiest, and most satisfying. Extremely easy to make. Just one warning: you will start to crave these! If the Cajun seasoning is too strong for your taste, go with something a little milder. I have also used the same amount of Allesio's Grilling Spices.

Ingredients
  • 1 cup flax seeds
  • 1/4 cup sesame seeds
  • 1/2 cup sunflower seeds
  • 2 Tablespoons Poppy Seeds
  • 3 Tablespoons Emeril's BAM cajun seasoning
  • 1/2 cup parmesan cheese
  • 1 cup water
Directions
  1. Put all the dry ingredients in a bowl and mix with large spoon. Add the water and let set about 10 minutes.
  2. Line cookie sheet with parchment paper and spoon the mixture onto the parchment. Put another piece of parchment on top and roll with a rolling pin until about 1/8" thin. Remove top parchment paper.
  3. Place in pre-heated 275 degree oven. after 45 minutes remove from oven and slice or break into cracker size pieces. turn oven up to 350 and bake about 10 more minutes.
  4. Crackers will continue to crisp as they cool. If they get a little soft after storing in zip-top bag, just place back in oven at 350 for 5-10 minutes.
