Carrot Cake (GF, Grain Free, & No Refined Sugar, and can be made Dairy Free)

Gluten Free, Grain Free, & No Refined Sugar, and can be made Dairy Free. I love this carrot cake! I got this recipe from the book, "Breaking the Vicious Cycle" by Elaine Gottschall. It's SCD legal :)

Servings: 1 dozen
Ingredients
  • 1 1/2 cups nut flour (*almond works great)
  • 1 1/2 cups finely shredded carrots
  • 3/4 cup honey
  • 1/2 cup butter, softened (or try coconut oil)
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • pinch salt
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • *I like to grind up my own almond flour using my food processor and whole raw almonds. I also use the food processor to grate the carrots.
Directions
  1. Add honey and eggs to softened butter and blend.
  2. Blend in nut flour, baking soda, salt, cinnamon, and vanilla.
  3. Add carrots, raisins, and nuts.
  4. Bake at 350*F, 45-60 minutes
*I haven't tried this yet using coconut oil, let me know how it works if you do!

    I tried this and it's mighty tasty. I will make it again, this time using coconut oil as I recently learned I also have a dairy intolerance.
