Bread for Great Toast (Gluten free, yeast free)

Ingredients
- 5 egg whites
- 2 tablespoons oil
- 1 tablespoon sugar
- 2 tablespoons guar gum or 1 1/2 T xanthan gum
- 3/4 teaspoon salt
- 1 tablespoon + 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup oats (I've used gf and reg. rolled oats and the wife had no problems)
- 1 cup white rice flour
- 1/2 cup corn starch
- 1/2 cup dates (or you can use cinnamon, raisins, etc)
- 1 cup milk (I use coffee creamer)
- 1 1/2 tablespoons apple cider vinegar
- 3-4 tablespoons honey (optional)
Directions
- IN A STAND MIXER OR LARGE BOWL, MIX 5 EGG WHITES, 2TBS OIL, 1 TBS SUGAR MIX WELL 1-2 MINS.
- HAVE DRY MIX READY: 2 TBS GUAR GUM OR 1 1/2 XANTHAM GUM, 3/4 TSP SALT ( I USE SEA SALT) 1 TSP BAKING SODA, 1 1/2 TBS BAKING SODA, OATS 1/2 CUP ( I'VE USED GF & REG. ROLLED OATS WIFE HAD NO PROBLEMS! ) WHITE RICE FLOUR 1 CUP, 1/2 CUP CORN STARCH
- NOTE I ADD 1/2 CUP DATES, YOU COULD ADD OTHER THINGS,CINNAMON, RAISINS ETC.
- NOW THAT DRY MIX IS READY ADD TO EGG MIXTURE 1 CUP MILK ( I USE COFFEE CREAMER ) 1 1/2 TBS APPLE VCIDER VINEGAR & 3 TO 4 TBS HONEY IF YOU WANT. (YOU DON'T HAVE TO!!)
- MIX UNTIL IT LOOKS LIKE A CAKE BATTER!
- PUT IN PREPARED LOAF PAN WET HANDS PUSH FLAT, INTO 350° OVEN CENTER. 55 MINS. I USE A HAND HELD THERMOMETER 195° IN CENTER 50/55 MINS. WILL WORK, LOAF WILL LOOK BROWN LET COOL, PUT IN PLASTIC WRAP- WILL KEEP A WEEK IN ICE BOX! (NOW YOU KNOW HOW OLD I AM) TOAST WITH JELLY, LET ME KNOW HOW YOU DO! Great bread. I made two loaves. One loaf with raisins and cinnamon, and one loaf with 1/2 cup chopped onions. Both loaves were absolutely fantastic. A great bread for those that can't have yeast.
