Banana Coconut Scones

Ingredients
- About 4 large, overripe, mashed bananas
- 1.5 cups brown rice flour
- 1 cup coconut flour
- 1/2 cup tapioca flour
- 1/2 cup whole cane sugar
- 2 tsp. baking powder
- 1.5 tsp. xanthan gum
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1 cup hemp/soy/almond/rice milk
- 1/4 cup melted virgin coconut oil
- 2 tsp. vanilla
- 1/2 cup chocolate chips, optional
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, combine the flours, sugar, xanthan gum, baking soda, baking powder and salt and mix well.
- In another bowl, mix together mashed banana, milk, coconut oil and vanilla. Add this mixture to the dry mix gently until it all comes together.
- Gently fold in chocolate chips. Don't over-mix!
- Divide into twelve scone-sized balls and place on greased or lined cookie sheets, pressing down until about 3/4 inch thick.
- Bake for 20 minutes or until golden brown on top and not gooey in the middle.
- Cool on a wire rack and store at room temperature in an airtight container.
Now this recipe is unique. I would have never thought of combining banana and coconut in a scone. The more I think about it the hungrier it makes me. I'll be giving this one a try for sure!
