Banana Coconut Scones

Ingredients
  • About 4 large, overripe, mashed bananas
  • 1.5 cups brown rice flour
  • 1 cup coconut flour
  • 1/2 cup tapioca flour
  • 1/2 cup whole cane sugar
  • 2 tsp. baking powder
  • 1.5 tsp. xanthan gum
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 cup hemp/soy/almond/rice milk
  • 1/4 cup melted virgin coconut oil
  • 2 tsp. vanilla
  • 1/2 cup chocolate chips, optional
Directions
  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine the flours, sugar, xanthan gum, baking soda, baking powder and salt and mix well.
  3. In another bowl, mix together mashed banana, milk, coconut oil and vanilla. Add this mixture to the dry mix gently until it all comes together.
  4. Gently fold in chocolate chips. Don't over-mix!
  5. Divide into twelve scone-sized balls and place on greased or lined cookie sheets, pressing down until about 3/4 inch thick.
  6. Bake for 20 minutes or until golden brown on top and not gooey in the middle.
  7. Cool on a wire rack and store at room temperature in an airtight container.

    Now this recipe is unique. I would have never thought of combining banana and coconut in a scone. The more I think about it the hungrier it makes me. I'll be giving this one a try for sure!
