Joan’s Gluten Free Great Bakes: Bialys

Bialys

The second stop on my journey through Joan’s Gluten Free Great Bakes products: Bialys. I had to look up what a Bialy even is before I put it in the oven. I’ve never seen a Bialy in California, or even heard of one. If you live in New York, skip over this description because you are probably very familiar with the Bialy. Bialy is a Yiddish word short for bialystoker, from Białystok, a city in Poland. A traditional Polish food, it is a chewy yeast roll similar to a bagel, yet instead of a hole in the middle it has a depression filled with diced onions and other ingredients, including (depending on the recipe) garlic, or poppy seeds. Joan’s version is gluten free and dairy free.

To me, Joan’s Bialy tasted like a perfect marriage of a soft pretzel and an “everything” bagel, and maybe some of Mamaw’s yeast rolls from East Texas. It rose in its 10 minutes in the oven to a spectacular, fluffy, doughy light brown. The spicy, garlic and onion smell filled the house. The bag says to let it cool before you slice it, but as was the case with Joan’s English Muffin and her Italian Bread, it just didn’t make it to cooling stage. I’m really excited about this product to use as a hamburger bun as well. The dough is just right and the spices will add a nice touch. It is even indented perfectly to fit a burger. I’ll definitely be buying more of these!
