I ran across an interesting cookbook recently. It’s called Fun with GF/LG Food. I decided to check it out for people who, from time to time, ask for Gluten Free, Low Glycemic Index, Sugar Free Recipes – add in there mostly vegetarian, mostly no grain, and very interesting- and you have Fun with GF/LG Food. Debbie Johnson, best-selling author of Think Yourself Thin also wrote a Natural Recipe Column for The Edge Magazine, shares ALL of her gluten-free, diabetic-friendly recipes.
Debbie Johnson, the former owner and executive chef of the Golden Chalice Restaurant, a 100% gluten-free, sugar-free, low-glycemic, organic, allergy-friendly establishment. A benefit for us: all the recipes were developed and tested at the Golden Chalice over a period of thirty years.
“Our entire restaurant was geared to people with food and environmental sensitivities of all kinds, yet we didn’t advertise the fact on our signage. So locals came in and thought we were just a fine gourmet restaurant. Who wouldn’t? Our menu offered only the freshest, organic, foods that were rich, flavorful, and delicious. Desserts were always a must at The Golden Chalice, they were just hard to resist.”
Every Recipe is Completely Gluten-Free, Sugar-Free (except fruit), Digestion-Friendly, Allergy-Friendly and Low Glycemic with Meat, Poultry, Fish meals and Tree-Nut-Free, Dairy-Free, Vegan and Vegetarian Options for most recipes. Some of the recipes call for Amaranth of Quinoa flour (both usually considered seeds), but no grain flours are used. She’s got pastas, pancakes, cakes, hashbrowns and more- all with no grains or potatoes (due to their high glycemic content.) She’s even included her famous low-glycemic Golden Chailce Cheesecake recipe (with variation for those who are dairy free, of course.)
I made the carrot cake recently (grain free!) and everyone loved it. I had to go out and buy a few unusual ingredients (for me, anyway), but it was well worth the healthy, gluten free, sugar free result I achieved! See my carrot cake in the photo above!
