Great, affordable, gluten free dinner in twenty minutes? Yes! Here’s one idea.
Working my way through the wonderfully easy Zatarain’s Gluten Free Rice Mixes that were sent to me, I discovered the New Orleans Style Garlic Butter Rice Mix (No Gluten, No MSG).
Clearly marked Gluten Free on the box, as are 19 of the Zatarain’s rice mixes (available at most US grocery stores) – with more under development, the Garlic Butter Rice Mix is a delicious blend of creamy, savory rice with plenty of flavorful garlic.
With only a few minutes to whip together dinner, I poured the rice mix in with 1 ¾ cups of water and some sliced fresh asparagus and a handful of pine nuts for crunch, and cooked according to directions for about twenty minutes. The rice came out perfectly!
While that was cooking, I grilled a few Aidells Artichoke & Garlic Smoke Chicken Sausages – also marked
gluten free on the package (No gluten, No MSG, No Nitrites, No Artificial Ingredients, No added hormones). Smoky and with big chunks of artichoke, these little beauties were on sale at my local Safeway.
In twenty minutes, my rice was done, the sausage was done, and I even had a little time to whip up a healthy Kale and Pineapple Salad with Poppy Seed Dressing to accompany my masterpiece. My quick, delicious gluten free meal was a complete success and cost only a couple of dollars per person.
It even felt a little gourmet and appeared as though I spent hours on it – so perfect for a rushed weekday evening. No one has to know how easy it was but me.
