<p>If you are an experienced gluten free shopper, it may be a little more than you need, but even so, you may just find some brands you didn’t really consider were gluten free. For example, the chip section lists many commonly found brands that are gluten free by ingredient, but not necessarily marketed as gluten free products.</p>
<p>It’s pretty easy to see right away which breads are gluten free, if any, in your grocery store, but maybe you’d like help with things like seasonings, sauces and salad dressings. Turn to “S” and you have hundreds of products right at your fingertips! You don’t have to buy the expensive specialty seasonings when you know which Durkee or McCormick spices are okay. It happens quite a bit at my house. I ran across a box of yummy rice that Zatarain’s sent me to try out, and way at the bottom I found a box of <strong><a href="http://zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Rice-Pudding-Mix.aspx" target="_blank">New Orleans Style Rice Pudding Mix</a>.</strong></p>
<p>In the South, my husband grew up on puddings of all kinds – bread pudding, tapioca pudding, rice pudding, so I grabbed that box and got started, knowing he’d love it. Since it was after 11 pm, I was thrilled to find it was so easy to come up with a late night tasty treat.</p>
<p>Three cups of skim milk and the contents of the box in the microwave for a few minutes and that’s it (They have stove top directions included as well)! I sprinkled with some cinnamon and we enjoyed a few bites of a warm, lightly sweetened, very creamy, easy and delicious late night treat. The rest went into pretty little glasses to enjoy cold the next day.</p>
<p>The New Orleans Style Rice Pudding Mix is one of the 19 Zatarain’s rice mixes that are gluten free (marked clearly on <a href="http://glutenfreeville.com/wp-content/uploads/2012/05/ricepud.jpg"><img class="alignright size-medium wp-image-5043" title="ricepud" src="http://glutenfreeville.com/wp-content/uploads/2012/05/ricepud-255x300.jpg" alt="" width="255" height="300" /></a>the front of the box), with more in development. (This mix is also MSG free, but not dairy free, in case you are wondering). Sometimes it’s just nice to grab a box and whip up something quick for a busy night!</p>
<p>The <a href="http://www.zatarains.com/Zatarains/GlutenFree/Default.aspx" target="_blank">Gluten Free section of the Zatarain’s website</a> has some amazing recipes, including one using the Rice Pudding Mix for <a href="http://www.zatarains.com/Recipes/Dessert/Bananas-Foster-Rice-Pudding.aspx" target="_blank">Bananas Foster Rice Pudding</a>. I’ll definitely be trying that one out soon!</p>

<p><strong>Bananas Foster Rice Pudding</strong></p>
<p>Perfect for brunch or dessert, this rice pudding was inspired by Bananas Foster, a classic New Orleans favorite.<br />
Makes 6 servings.</p>
<p><strong>Ingredients</strong></p>

<td>3 cups milk</td>
</tr>
<tr>
<td>6 tablespoons butter, divided</td>
</tr>
<tr>
<td>1 package <a href="http://www.zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Rice-Pudding-Mix.aspx">ZATARAIN&#8217;S® Rice Pudding</a></td>
</tr>
<tr>
<td>1/2 cup packed brown sugar</td>
</tr>
<tr>
<td>1/4 cup heavy cream</td>
</tr>
<tr>
<td>1/4 teaspoon rum <span style="text-decoration: underline;">or</span> vanilla extract</td>
</tr>
<tr>
<td>2 ripe bananas, sliced</td>
</tr>
</tbody>
</table>
<p><strong>Directions</strong></p>
<p>1. Mix milk, 2 tablespoon of the butter and Rice Pudding Mix in medium saucepan. Bring to boil on medium-high heat. Reduce heat to low; simmer, uncovered, 45 minutes or until rice is tender, stirring occasionally.</p>
<p>2. Remove from heat. Let stand 5 minutes. Spoon rice pudding into dessert dishes. Rice pudding will thicken as it cools.</p>
<p>3. Meanwhile, bring brown sugar, remaining 4 tablespoons butter and cream to boil in small saucepan on medium heat. Reduce heat to low; simmer 10 minutes or until slightly thickened. Remove from heat. Stir in extract. Top rice pudding with sliced bananas. Drizzle with sauce.</p>

<p>I received a few of Brad’s products to try out. So you know my official position on kale before reading my comments, if I had known they were sending Kale Chips, I would have politely declined. Yes, I understand that Kale is really good for me, but I’m just not a kale fan. Not until now that is. This non-kale lover has been converted!</p>
<p>Brad’s crackers and chips are gluten free, vegan, high in fiber, a good source of Omega-3&#8242;s, a healthy snack alternative for kids, rich in vitamins and enzymes and made out of fresh vegetables.</p>
<p>Brad’s says these amazing chips are “dehydrated below 115 degrees to preserve the nutrients and enzymes that aid digestion and keep you energized, you no longer have to feel guilty about indulging in your favorite snack!”</p>
<p><a href="http://www.bradsrawchips.com/pages/raw-benefits" target="_blank">Why raw?</a> Brad began his raw diet in 2006, overweight and out of shape. His health, weight, and energy improved and changed so much, that he stayed with it, and now has a mission to share the benefits of the raw diet with others, along with some great crunchy raw snacks.</p>

<p>Looking for some easy and affordable gluten free meals and side dishes? Zatarain’s offers 19 rice mixes – with more in development – that feature a gluten-free designation on the front of the product packaging, confirming that each rice mix has been formulated as gluten-free and the production systems and processes have been validated to ensure the finished rice mixes are free of gluten. These rice mixes – including favorites like jambalaya, dirty rice and yellow rice – are the same flavorful products people already know and love, but with a gluten-free seal now displayed on the package.</p>
<p>Zatarain’s sent me 3 different mixes to actually try out and I decided that I would experiment with some of their great sounding recipes. Each box has a recipe or add in ideas on it, and they have quite a few recipes posted in the Gluten Free section on their website. It would only take a few minutes to make the mixes as a side dish, but I found that the three main dishes I made were very simple and delicious as well and really took no extra time at all. I’ll be sending the Zatarain’s website and a few boxes of rice to my gluten free college kids as well. These meals are perfect to help the non-gourmet cook feel like one!</p>
<p>First I tried the New Orleans Style <a href="http://zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Dirty-Rice-Mix-Original.aspx" target="_blank">Dirty Rice Mix</a> (Click for ingredients, nutrition info, etc.) I jazzed it up with about a pound of leftover baked ham and turned it into a main dish in 25 minutes! I&#8217;m not super familiar with New Orleans style cuisine, but I was pleasantly surprised at the spicy, but not too spicy flavor of this rice. The box says to use ground beef, but ham is what I had to use and it was fabulous!</p>

<p>Next I tried the <a href="http://zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Yellow-Rice.aspx" target="_blank">New Orleans Style Yellow Rice Mix</a> (Click for ingredients, nutrition info, etc.) The recipe on the back of the box looked interesting, so I decided to give it a try. It’s the Creole Rice Dressing. It calls for a few ingredients that must be found in a gluten free version, such as corn bread mix and chicken stock, but it’s very doable. I had Pamela’s Corn Bread Mix and Joan’s Gluten Free frozen corn bread on hand, so I went with the Joan’s since the recipe called for it to be prepared and Joan’s is a dough in it’s own little dish and just needed to be popped in the oven for a few minutes while I prepared the rest. Garlic, sausage, onions, celery, spices, butter and eggs added to the rice and corn bread. This came out like a casserole because of the eggs and less like a dressing. It was hearty and flavorful and pretty amazing! I’ll definitely be making this again!</p>

<p>Next, I purused Zatarain’s Gluten Free recipe section on thier website and went with the <a href="http://www.zatarains.com/Recipes/Breakfast-Brunch/Gluten-Free-Jambalaya-Breakfast-Casserole.aspx" target="_blank">Jambalaya Breakfast Casserole</a>. Instead of ham, I used sausage along with cheese, pepper, onions, eggs, cheese and Zatarain’s <a href="http://zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Jambalaya-Mix-Original.aspx" target="_blank">New Orleans Style Jambalaya Rice Mix</a> (Click for ingredients, nutrition info, etc.) Outstanding! I would have never imagined that a breakfast recipe with rice would be so great and unusual, although I would probably serve it for a brunch, lunch or even dinner, though. We had it for dinner and then again for breakfast and wanted more! It resembled a quiche in texture, but had that unique New Orleans style flavor that is new to me, but I enjoyed it very much. The recipe called for Jack Cheese, and that was great, but I think I’ll try sharp cheddar next time.</p>
<p>Next up will be <a href="http://www.zatarains.com/Recipes/Main-Dish/Gluten-Free-Dulac-Dirty-Rice.aspx" target="_blank">Gluten Free Dulac Dirty Rice</a> with ground beef, raisins, pecans, bacon and green onions. Yum!</p>

<p>The world-famous, 5 star dining experience, inspired by France in an American setting, is known for it&#8217;s delicate and surprising <strong><a href="http://www.tkrg.org/upload/fl_menu.pdf" target="_blank">menu</a>.</strong></p>
<p>&#8220;Lena Kwak, the restaurant’s culinary researcher, developed a gluten-free flour. Now she and Mr. Keller are partners in a company called Cup4Cup, so-named because its flour, C4C, can replace the regular all-purpose variety for cakes and pastries. It is a blend of flours from white and brown rice, tapioca and potatoes, with potato starch, cornstarch and milk powder.&#8221;</p>

<p><strong>UPDATE: 2/12:</strong> I have used several bags of this flour since they introduced it. It is quite expensive, but everything I&#8217;ve made with it has turned out fabulously! It works well in each recipe I have tried it in, so I&#8217;m very happy to have found it.</p>

I learned how to shop gluten free, cook gluten free and travel gluten free from <em>Living Without</em> in those first crucial weeks and months. I knew no one else who was gluten free, so they answered all my questions, and gave me all my advice. Years later, I still anxiously await each new issue. I have since added a few other magazines on gluten free living, but if you only get one, get this one! This is one of the best gluten free resources you will find anywhere!</p>
<p><em>Living Without</em> bills itself as “The magazine for people with allergies and food sensitivities.” Each recipe, and there are many, is free of gluten, dairy and the top 8 allergens, or tells you how to make substitutions, and includes articles relating to living without multiple ingredients.</p>
<p>Some great monthly resources for beginners are the Gluten Free Quick-Start Guide and Casein Free Quick Start Guide located in the back of the magazine. They explain the basics of what to eat and what to steer clear of. The Substitution Solutions page has been in the front of my recipe notebook since I received my very first issue, and gives you the basics of gluten free (dairy free if you wish) baking. Once you get your first copy, take this page out of your future copies and pass it along to relatives to explain the basics to them!</p>

<p>The author states in the beginning of the book that this plan is not for weight loss purposes, but that whole day sounds like many weight loss diet plan menus to me. I bet you would lose weight on this plan.</p>
<p>You’ll find other dinner recipes such as Shrimp Kebobs with Grilled Vegetables and Quinoa, Grilled Steak with Vegetables and Sweet Potato Fries, Chicken Pasta Primavera in Garlic Sauce and many more yummy recipes and ideas.</p>
<p>This is the easiest way to go gluten free – no guessing about menus, recipes or ingredients. Just follow the menu for each of the 30 days or swap things around using the handy lists provided.
